Also known as Indian spinach, Ceylon spinach, or vine spinach, it is not a spinach. This is a heat-loving climbing green with thick,mucilaginous leaves that remain productive all summer, even when true spinach bolts. It has a mild flavor, is great in stir-fries, soups, and curries, and also acts as a natural thickener. Grow on a trellis for easy picking and clean leaves. provide full sun to part shade. Direct sow after the last frost when the soil is warm, or start indoors 4–6 weeks early. To speed germination, soak seeds overnight. Trellis or fence support is recommended.
