Molokhia (molokhyia), also known as Jue mallow has been cultivated in Egypt for centuries and is beloved across Middle Eastern cuisines, especially in molokhia soup/stew. In the same plant family as okra, durian, and cacao, it produces lovely yellow flowers that dry in fall and form pods. Harvest pods young—before they harden—and cook them like okra. 

This heat-loving leafy green is prized for tender leaves and a rich, savory flavor. It grows fast and stays productive all summer in full sun, when true spinach struggles. Direct sow after last frost once soil is warm, or start indoors for earlier growth. Thin to 15–25 cm (6–10″). Pick young leaves and tips often to encourage branching, and water regularly for tender growth. Chigarden 2026
