◊Description
The Chi Garden’s organic and freshly dug sunroot, sunchoke, or Jerusalem artichokes, are sweet, crunchy and nutty-tasting. They are tubers that resemble knobbly potatoes. They are earthy and delicious and can be eaten raw or cooked.
Sunroot is indigenous to North America and was a major stable for first nations in eastern seashore. They are hard to find in grocery stores, but are an amazing vegetable!
◊Flavour and How to use
Wonderful flavour. Dense, sour, sweet, tangy, gingery and deep.
Use as rice topper. Pasta and noodle companion. Stir fry. Salad. Soup. Stew.
Grandma uses this ferment to make a stir fry with potato slices and pork tenderloin. Since the ferment already contains salt, no additional salt may be needed.
