A naturally fermentation product using organic kale as the main ingredient.
Lacto-fermentation, like sauerkraut and kimchi, is an ancient wild/spontaneous food preservation technique used in many parts of the world.
Kale Kraut Mountain Style was inspired by indigenous peoples living in mountain and valley areas in Southwest China, Nepal and Myanmar. It uses a dry-ferment technique, which requires kale to be sun-kissed and half dehydrated, before fermented using salt, a touch of sugar (to give a boost to the process) and spices. Some radish and radish green is added in this batch.
Rich in prebiotic and probiotic, this is a light-weight ferment. It is carried to the mountains by nomads, as such brine-less ferments are easy to carry, and adds flavour and nutrients when they tend to the summer pastures and animals.

◊Flavour and How to use
Wonderful flavour. Dense, sour, sweet, tangy, gingery and deep.
Use as rice topper. Pasta and noodle companion. Stir fry. Salad. Soup. Stew.
Grandma uses this ferment to make a stir fry with potato slices and pork tenderloin. Since the ferment already contains salt, no additional salt may be needed.
